Niels Peter Pretzmann is a Danish entrepreneur whose work spans farming, gastronomy, and food technology — all linked by one goal: creating fully integrated, circular food systems. Rooted in a family background in agriculture, he has spent his career building models that connect farm, kitchen, and consumer in a closed, regenerative loop.

In Lithuania, he is the driving force behind Farmers Circle, a 783-hectare organic and regenerative farm that supplies the award-winning restaurants of Senatorių Pasažas in Vilnius, including the Michelin-starred Nineteen18 and Bib Gourmand-awarded 14Horses. His team also created Red Brick — Lithuania’s first Michelin Green Star restaurant — showcasing a true farm-to-table landscape experience.

Niels Peter brings the same circular philosophy to his projects in Denmark. He is an investor in Brøl Brewery, which upcycles ingredients to reduce food waste, and Noon Catering, which applies responsible food principles in urban settings. His commitment to resilient, local supply chains extends to food technology as well — he is a key investor in Leafood, one of Europe’s largest vertical farms, providing year-round, pesticide-free produce for the HORECA sector.
